Fine! I’ll make pancakes then!! (Blueberry Oat Pancakes)

Hope everyone is enjoying their first few days of May. So far so good with the weather, except for that downpour we had last week that flooded my area and my work space. I wanted to check out to see what else can I make for breakfast yummy oatmeal and crunching down on cereal. I found out that my oatmeal was almost finished (Darn, I knew I forgot something while grocery shopping this past Friday). What to do!?!?! Sigh, so I searched the web and the Reader’s section and I stumbled upon Honey Lemon Tea’s Pancake’s recipe. What made this recipe unique was that it had oats in it and pretty much you can add your favorite fruit in it. With this amount of oatmeal I had left,there was no way I would be satisfied with it. Fine! I guess I’ll make some pancakes then!

 

Ingredients

  • 1 cup of Aunt Jemima Buttermilk Mix(I know I didn’t make it from scratch but still worth it!)
  • 1 cup of milk
  • 1 egg
  • 1 tablespoon of canola oil
  • 1/2 handful of oats
  • 1/2 teaspoon of Vanilla Extract
  • 1/4 tablespoon of cinnamon
  • 1/2 cup of Frozen Blueberries
  • 1 tablespoon of butter

Steps

  1. Add the 1 cup of buttermilk mix inside of a bowl Aunt Jemimah
  2. Pour in 1 cup of milk into the bowl  pancake mix
  3. Crack 1 egg  inside the bowl(exclude the eggshell. Haha)  egg mix
  4. Get a half handful of oats and add it into the mix
  5. Add 1 tablespoon of canola oil into the bowl mix
  6. Add 1/2 teaspoon of Vanilla Extract( not too much or else you will overpower your pancakes with vanilla)
  7. Add 1/4 tablespoon of cinnamon into the mix  IMG_1156
  8. STIR EVERYTHING TOGETHER and make sure that there are NO LUMPS IN YOUR BATTER!!!  no lumps!
  9. Preheat your pan and add the 1 tablespoon of butter in the pan. Spread it around until it melts.  pan with butter
  10. Tricky Part: When ready, pour the batter at the edge of the pan to the specific size that you want for your pancakes.
  11. **Do not worry if all of the batter cannot fit in one batch. Make more after you are done
  12. After adding the batter, add a certain amount of blueberries in the RAW SIDE of the pancake.  
  13. Check if bottom side is brown, then flip the pancake to the other side until golden brown.  IMG_1161
  14. ONLY FLIP THE PANCAKE TWICE TO MAKE IT FLUFFY. IF YOU FLIP IT MANY TIMES, IT WILL NOT BE AS SOFT AND FLUFFY.  
  15. After you flipped the pancake on both sides, serve it on the plate

OH MAYGOODNESS! This was a pretty good turnout. I tasted my blueberries, cinnamon, hint of vanilla, EVERYTHING!! This whole process took me 10 minutes tops. Really great Recipe from Honey Lemon Tea. Thank you! Finally another thing I can add to my breakfast repertoire  when I run out of my oatmeal.
